    Clabber Girl Baking Powder

    Recipe Introduction

2002 Louisiana State Fair 2nd place winner - Sarah Trice of Bossier City

    List of Ingredients

1 Navel orange, cut into small pieces and blended in blender.
    2/3 cup chopped walnuts
2/3 cup coarsley chopped maraschino cherries
    2/3 cup flaked coconut
1/2 cup canned crushed pineapple (drained)
    1/4 cup melted butter
    2 cups granulated sugar
    4 eggs
    3 cups all-purpose flour
1 tablespoon Clabber Girl Baking Powder
    1/2 teaspoon salt

    Glaze:
    1/2 cup powdered (confectioners') sugar
    1/2 teaspoon vanilla extract
    1 to 2 teaspoons milk

    Recipe

Preheat oven to 350 degrees F.

In a large bowl beat together sugar and eggs. Add cherries, orange, coconut, walnuts, pineapple and butter. In a medium bowl combine flour, baking powder and salt. Stir into liquid mixture with a wooden spoon and stir just until ingredients are combined. Pour into a greased and floured 9x5x3-inch loaf pan.

Bake at 350 degrees F. for one hour or until quickbead tests done. (stick a toothpick in the middle and see if it comes out clean.) Place pan on top of wire cooling rack and cool for 15 minutes. Remove from pan and turn out onto cloth to cool completely.

For Glaze: In a small bowl mix together the powdered sugar and vanilla. Stir in just enough milk to make icing drizzle over cake.
    Top cake with vanilla icing.
