    The tang of goat cheese holds its own in these wee, tender, salty scones, despite the small amount used. They go well with jam.

    List of Ingredients




    1-1/4 cups all-purpose flour

    1-1/2 tsp baking powder

    1/2 tsp salt

    Zest of 1/2 lemon

    1 tbsp thyme, chopped

    1/3 cup cold, unsalted butter

    2 oz (60 g) goat cheese, crumbled

    1/4 cup whipping cream

    1 tbsp lemon juice

    1 egg + 1 yolk

    1 tbsp milk

    Recipe



    Sift flour, baking powder and salt into large bowl. Add zest and thyme. Using box grater, coarsely grate butter into mixture. Add cheese. Using hands, mix into coarse meal.

    In small bowl, stir together cream, lemon juice and whole egg. Add to flour mixture. Stir just until dough has come together and flour is blended. Refrigerate 10 minutes.

    On lightly floured surface, roll out dough to 1/2-inch thickness. Cut out scones using 2-inch round cutter. Place on baking sheet lined with parchment.

    Mix yolk and milk with fork. Brush on top of scones.

    Bake in preheated 375F oven 15 to 20 minutes, until golden brown. Serve warm.

    Makes about 12.
