    I Can't Believe It's Not Butter! ®

    List of Ingredients




    2 large lemons
    2-1/4 cups all-purpose flour
    1-1/4 cups sugar
    2 tsps. baking powder
    1/2 tsp. salt
    3/4 cup I Can't Believe It's Not Butter!® Spread
    3 eggs
    1/2 cup milk
    1 tsp. vanilla extract

    Recipe



    Preheat oven to 350°. Grease 9-x 5-x 3-inch loaf pan; set aside.

    Grate the peel and squeeze 1/4 cup lemon juice from lemons; set aside.

    In large bowl, combine flour, sugar, baking powder and salt. With pastry blender or two knives, cut in I Can't Believe It's Not Butter!® Spread until mixture is size of small peas. Stir in 1 tablespoon lemon peel. In small bowl, with fork, beat eggs, milk, lemon juice and vanilla; stir into flour mixture, just until moistened. Evenly spoon batter into prepared pan; sprinkle with remaining lemon peel.

    Bake 1 hour or until toothpick inserted in center comes out clean. On wire rack, cool 20 minutes; remove from pan and cool completely.
    Makes: 1 loaf
