    225g Self-Raising Flour
    2 Tsp Baking Powder
    110g Western Star Butter, chopped into cubes
    55g Castor Sugar
    110g Mixed Dried Fruit
    55g Currants
    1 Egg
    3 Tbsp Milk
    demerara sugar, for sprinkling

    Recipe



    Preheat the oven to 200C. Lightly grease two baking sheets.

    Sift the flour, baking powder and sugar into a large mixing bowl. Add the butter and using your fingers, rub together with the flour until the mixture resembles fine breadcrumbs. Add the fruit and give a quick stir and then add the egg and milk and mix well until it forms a stiff mixture. Add more or less milk if you need
    Using your hands, roll the mixture into rough mounds and place on the baking tray. Sprinkle the top with demerara sugar.

    Bake in the oven for about 15 minutes or until pale golden brown at the edges. Cool on a wire rack, and serve with a big glass of cold milk.
