½ Cup Western Star Butter
1 Cup Castor Sugar
2 Eggs, lightly beaten
3 Medium Ripe Bananas, mashed
2 Cups Plain Flour
¾ Tsp BiCarb Soda
½ Tsp Ground Cinnamon
¼ Tsp Salt




Recipe



Preheat the oven to 180C. Lightly grease and/or line a 23cm loaf tin.

Beat the butter and sugar in a bowl until creamy and pale. Mix in the eggs and bananas. Sift in the flour, bicarb, cinnamon and salt and mix until well combined.

Pour the batter into the loaf tin and bake in the oven for 45 minutes or until a skewer comes out clean. Cool on a wire rack.

Serve warm or cold.
