All-Day Breakfast Slice

125g unsmoked back bacon, roughly chopped
15ml spoon olive oil
medium red onion, diced
125g button mushrooms, halved
500g cooked new potatoes, sliced
6 medium eggs
salt and freshly ground black pepper
Recipe
1. Preheat the oven to 190°C, 375°F, Gas Mark 5.
2. Place the bacon in a large frying pan with the oil and onion and cook for 6 - 8 minutes over a medium heat, stirring occasionally. Add the mushrooms and potatoes and cook for a further 5 minutes until golden.
3. Transfer to a 18cm x 23cm x 2cm swiss roll tin or similar.
4. Beat the eggs with a little seasoning to taste and pour into the tin. Bake in the preheated oven for approximately 15 minutes or until the egg has just set.
5. Turn out on to a wire rack and leave to cool slightly. Slice and serve warm for breakfast, or with a mixed salad for lunch or dinner. Or chill and pack in the children's lunchboxes in a cooler bag.
