List of Ingredients
1 Tbsp vegetable oil
3 cups frozen O’Brien potatoes
1/4 tsp each salt and pepper
3/4 cup (4 oz) diced ham
8 large eggs
1/2 cup (2 oz) shredded Monterey Jack or Cheddar cheese
Recipe
1. Heat broiler. Heat oil in a 10- to 11-in. nonstick skillet over medium heat. Add frozen potatoes, salt and pepper. Cover and cook as package directs. Add ham and cook, stirring, until hot. Reduce heat to medium-low.
2. Whisk eggs in a large bowl. Pour into skillet and stir to combine with potato mixture.
3. Cover and cook 6 minutes or until eggs are set on bottom. Sprinkle with cheese.
4. Broil 4 to 5 in. from heat source 1 to 2 minutes until eggs set and cheese melts (see Tip). Slide onto serving plate and cut into wedges
