Crab And Zucchini Flower Omelette

2 eggs
2 teaspoons olive oil
1 clove garlic, chopped
1 red chilli, seeds removed and chopped
2 zucchini flowers, stamen removed and sliced
1/3 cup crabmeat
10g butter
Recipe
Crack eggs into a bowl. Fill ½ of one of the egg shells with water and add to the eggs. Season with salt and pepper and beat well with a fork.
Heat oil in a medium sized frying pan. Add garlic and chilli. Cook for 30 seconds. Add zucchini flowers and cook a further minute or until wilted. Stir through crab meat. Transfer mixture to a bowl.
Add butter to the pan. Add eggs and cook stirring for about 10 seconds. Place crab mixture on top. Fold over and slide onto a plate. Serve immediately.
