Egg Casserole with Cajun Sauce

2 cups plain croutons
1 cup shredded Monterey Jack cheese (4 ounces)
4 eggs
2 cups milk
1 teaspoon yellow mustard
Dash black pepper
1 recipe Cajun Sauce (see recipe below)
Recipe
1. Preheat oven to 325 degree F. Grease a 2-quart square baking dish. In prepared baking dish combine croutons and cheese; set aside.
2. In a medium bowl whisk together eggs, milk, mustard, and pepper. Pour egg mixture over croutons and cheese in baking dish.
3. Bake in preheated oven about 40 minutes or until knife inserted near center comes out clean.
4. Meanwhile, prepare Cajun Sauce. Let casserole stand for 10 minutes before serving. Serve with Cajun Sauce.
Cajun Sauce: In a medium saucepan combine one 14-1/2-ounce can diced tomatoes with green pepper and onion, undrained; 1 teaspoon Cajun seasoning; 1 teaspoon sugar; and dash black pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture is slightly thickened and reduced to 1-1/4 cups. Stir in 1/4 cup sliced pimiento-stuffed green olives; heat through. Makes 1-1/2 cups.
