Eggs Florentine Frittata Casserole

List of Ingredients
9 eggs
2 cups low-fat cottage cheese
1/4 pound shredded cheddar
1/2 cup feta cheese, crumbled
1/2 teaspoon ground nutmeg
1/2 teaspoon black pepper
1/2 teaspoon salt
2 packages (10 ounce each) frozen chopped spinach, thawed and water squeezed out
1 sweet red pepper, seeded and sliced thin
Recipe
Preheat oven to 375 degrees. Spray a 13 by 9 by 2 inch baking dish with non-stick cooking spray.
In a large bowl, whisk together the eggs, cottage cheese, cheddar cheese, feta cheese, nutmeg, pepper and salt. Stir in the spinach.
Pour egg mixture into prepared baking dish. Arrange red pepper strips on top.
Bake in the preheated oven for 45 minutes or until mixture is set. Cool for10 minutes before serving.
