Orange Pancakes

Batter:
125g plain wholemeal flour
1 medium size egg
300ml milk
15ml spoon oil
Filling:
2 oranges
250g natural fromage frais
15ml spoon clear honey
To finish:
2 x 15ml spoons sugar-free apricot jam, warmed
Recipe
Make the batter and cook 10-12 pancakes.
Grate the zest of 1 orange finely and mix with the fromage frais and honey.
Peel the skin and pith from both oranges and cut into segments; reserve a few segments for decoration.
Spread a spoonful of filling on each pancake, place a few orange segments on top and roll up. Arrange on a heatproof dish and brush with a little apricot jam.
Bake in a preheated oven, 190°C, 375°F, Gas Mark 5 for 15 minutes. Top with the reserved orange segments.
