    Puffy Baked Eggs

    This recipe is from The New Eat Yourself Thin Like I Did! Low Carb Cookbook by iVillager Nancy Moshier, R.N.

    List of Ingredients




    18 large eggs
    2 tablespoons butter
    1 cup sour cream
    1/2 cup heavy cream
    1/2 cup water
    2 teaspoons salt
    1/4 cup green onion, sliced with tops
    3 tablespoons Hormel Real Bacon Bits (in a jar)
    1 cup cheddar cheese, shredded (1/2 of 8 ounce package)

    Recipe



    1. Pre-heat oven to 325 degrees. Melt butter in 9"-by-13" baking pan in oven for about 5 minutes.
    2. Mix all ingredients well except green onion, bacon bits and cheese. Add onion, mix well and pour into prepared pan.

    3. Bake about 35 minutes or until eggs are set. Sprinkle with bacon bits, then cheese. Return to oven until cheese is melted, about 5 minutes
