Smoked Salmon Omelette wScallions&Pepper

List of Ingredients
8 eggs 8
1 tsp salt 5 ml
1/2 tsp pepper 2.5 ml
4 tbsp scallions chopped 60 ml
(green onion)
2 tbsp red peppers, 30 ml
chopped
2 tbsp yellow peppers, 30 ml
chopped
8 oz smoked salmon, 250 g
shredded
1 tbsp fresh dill, chopped 15 ml
6 oz brie, sliced 185 g
2 tbsp vegetable oil 30 mlFRecipe
1. Break eggs into a bowl. Add salt, pepper, dill and
whisk to blend.
2. Place T-FAL Perfection skillet on medium heat.
3. Add oil, scallions (green onion), red and yellow
peppers to skillet and cook for 2-3 minutes.
4. Add egg mixture. Wait till the eggs bubble in the
centre of the pan. Gently stir until eggs are cooked
and slide freely in the pan.
5. Place the smoked salmon and thinly sliced brie in
the middle of the skillet and fold one half over the
other. Serve immediately. Serve with toasted
breads. Serves 4.
