Spiced Apple Pancakes

For the scotch pancakes
125g self raising flour, sifted
1 medium egg
150ml semi skimmed milk
15ml spoon vegetable oil
Spiced apple topping
25g butter
50g demarara sugar
4 granny smith apples, quartered and cored
½ x 5ml spoon ground cinnamon
½ x 5ml spoon ground ginger
75g sultanas
200ml tub Be Good To Yourself creme fraiche
Recipe
To make the pancakes: place the flour, egg and milk in a bowl and whisk until light and frothy, pour into a jug and leave to stand, covered in the refrigerator until required.
Melt the butter and sugar in a medium frying pan and add the slices of apple, cinnamon, ginger and sultanas and cook over a low heat until the apples are softened but not mushy. This takes approximately 5-7 minutes then transfer carefully to a bowl.
Heat the oil in the fryingpan then drain it back into a heatproof ramekin dish. Place a tablepoonful of mixture into the frying pan spreading it into a 7cm circle. Cook additional pancakes in there at the same time. Cook for 1-2 minutes, once the top starts to form bubbles turn the pancake over. When cooked transfer to a wire rack to cool.
Continue to make the pancakes until all the mixture has been used.
Once the pancakes are cool top with a little creme fraiche and a spoonful of the spiced apple mixture.
