Sticky Apple and Date Pancakes

1 1/2 Granny Smith apples
85g fresh dates, chopped
150g self-raising flour
1/2 x 5ml spoons salt
2 eggs
1 1/2 x 15ml spoons caster sugar
100ml milk
sunflower oil for frying
To serve:
maple syrup
Recipe
Sift the flour and salt into a bowl, add the eggs, sugar and milk and beat until smooth. Add the dates and the apple and stir thoroughly. Chill.
Heat a small amount of oil in a pan. Pour in some of the batter mix and fry over a low heat for a few minutes, turning when brown. Stack the pancakes up and keep warm. Serve with lots of maple syrup.
