12 slices from a 400g Warburtons white milk loaf
50g golden caster sugar
¾ x 200g pack creamery light soft cheese
5ml spoons icing sugar
4 drops extract of vanilla
3x15ml spoons strawberry jam
400g strawberries, washed, hulled and sliced
to garnish:
icing sugar
4 sprigs fresh mint
Recipe
1. Preheat the grill to moderate and toast the slices of milk loaf on one side. Turn them over, sprinkle with the caster sugar and toast for 2-3 minutes until the sugar melts and caramelises. Cool on a wire rack.
2. Mix together the soft cheese, and vanilla extract in a bowl.
3. Take 4 slices of toast, spread the sugared sides with some of the jam, then some of the creamery mixture, and top with the sliced strawberries. Repeat the whole process to add another layer, making 4 stacks in total.
4. Top each of the 4 separate stacks with a third slice of toast, sugared side up. Dust with icing sugar, garnish with a sprig of mint and cut each stack in half before serving.
