2 cups sliced Portabella mushrooms
1/2 cup chopped fresh onion
2 tsp margarine
1/2 cup lowfat cottage cheese
3/4 cup vegetable broth
1/3 cup freshly grated Parmesan cheese
4 egg whites
1/2 cup grated Swiss cheese
1 tsp thyme
1 tsp tarragon
1/4 tsp fresh ground pepper
Sliced green peppers
1 frozen lowfat piecrust Recipe
Preheat oven to 425F. Saute onions and mushrooms in margarine until the mushrooms release their fluid. Mix remaining ingredients, except the Swiss cheese, in a bowl. In a crust, layer the Swiss cheese, then mushrooms and onions. Pour egg mixture over the top. Cook at 425F on a cookie sheet for approximately 45 minutes. Serves 8.
