Triple B Muffins

1 medium ripe banana mashed
2 cups of Post Bran Flakes or All Bran (much more branny with All Bran)
1 teaspoon vanilla
1 1/4 cup skim milk
½ cup egg beaters
1 teaspoon cinnamon or apple pie spice
1/3 cup dark brown sugar
1 cup of blueberries (fresh or frozen)
1 1/4 cup of low fat Bisquick mix
Recipe
Preheat oven to 400F. In a medium bowl, mash the banana and add the “cereal”, the milk, the vanilla and the egg beaters, In a small bowl, mix the Bisquick, the spice and the brown sugar. Add to the wet mixture and stir until just combined, do not over mix. Fold in blueberries. Spray muffin tin or use paper cups and fill. Makes 12 muffins. Bake for 23 minutes but check after 21 minutes for doneness. Remove from the oven and let sit in the muffin tin for 10 minutes. Remove muffins from the pan and cool a little more before eating. The muffins are really soft when they come out of the oven but they firm up as they cool.
Tip: If you cool your batter before using (about 15 minutes), your muffin tops will rise higher.
