    List of Ingredients




    2 Cartons of Egg Beaters
    1 package of frozen chopped spinach (squeezed dry)
    1 roasted red pepper, diced
    1/2 c. low fat shredded cheese
    1 tsp. chili powder
    salt and pepper according to taste (I use about 1 tsp. salt and about 2 tsp. of pepper)
    2 green onions finely chopped

    Recipe



    mix together egg beaters, spinach, green onion, spices and red pepper in a large bowl.

    Pour into a cast iron skillet sprayed with cooking spray.

    Bake in an oven at about 350 till cooked through (will probably take about 20-25min)

    When done, sprinkle shredded cheese over top and pop under the broiler for a minute or two untill cheese is hot and bubbley.

    Special Notes


    To roast a red pepper, just pop in under the broiler in your oven (or throw on the BBQ in the summer) and roast untill all the sides are blackened (turn it as each side get's charred). Let cool completely and then peel off the skin.

    Make sure you drain the spinach really well, otherwise it will take longer to cook because of the extra water.

    For variations in flavour add some diced smoked Salmon or fat free ham or diced chicken. Just remember to add the points.
