blueberry buttermilk pancakes

1 large egg
1 cup buttermilk
1 cup self-raising flour
1 tbs caster sugar
1 pinch baking powder
1 punnet blueberries
1 tbs icing sugar to serve
lemon wedges to serve
Recipe
Place the egg and buttermilk in a jug and whisk to combine.
Place the self raising flour, sugar and baking powder in a bowl and make a well in the centre. Gradually pour in the combined egg and milk and whisk to a smooth batter. Gently stir through the blueberries.
Lightly coat a non-stick frypan with cooking spray and heat. Pour ½ cupfuls of batter into the pan and cook over medium heat, turning once until the pancakes are lightly golden on both sides. Keep the pancakes warm while cooking the remaining mixture.
Place 2 pancakes on individual serving plates. Dust with icing sugar and serve with a lemon wedges.
