    Start the day in style with this exciting breakfast idea!

    List of Ingredients




    150g baby spinach
    2 tbs canned reduced cream
    2 tsp wholegrain mustard
    1 tbs fresh parsley, finely chopped
    4 eggs
    2 English muffins, halved
    sprinkle paprika

    Recipe



    Coat a pan with cooking spray, heat and add the spinach. Cook, stirring until just wilted. Drain any liquid from the pan. Stir in the cream, mustard and parsley. Stir over heat to combine.


    Poach the eggs until cooked as desired.


    Top each muffin half with the spinach mixture and an egg. Sprinkle with the paprika.
