Angel Hair Frittata

100g angel hair pasta
1 tablespoon vegetable oil
1 small leek (200g), chopped coarsely
2 cloves garlic, crushed
¼ cup (20g) finely grated parmesan cheese
200g fetta cheese, crumbled
60g spinach leaves, chopped coarsely
½ cup (120g) sour cream
¼ teaspoon ground nutmeg
6 eggs, beaten lightly
Recipe
Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.
Meanwhile, heat oil in 20cm frying pan; cook leek and garlic, stirring, until leek softens.
Combine pasta and leek mixture in large bowl with cheeses, spinach, sour cream, nutmeg and egg. Pour mixture into same frying pan, cover; cook over low heat 10 minutes.
Remove cover; place under heated grill about 5 minutes or until frittata sets and top browns lightly. Stand in pan 5 minutes before serving.
