List of Ingredients
3 eggs, lightly beaten
1 3/4 cups milk
2 cups self raising flour
2 teaspoons sugar
75g Western Star butter, melted
extra Western Star butter, for cooking
stewed fruit, fresh fruit or lime curd, maple syrup, golden syrup, sugar, lemon or ice cream, for serving
Recipe
Combine eggs and milk and add to sifted flour and sugar, whisking continuously until smooth.
Add melted Western Star butter and whisk until combined.
Melt extra Western Star butter in a heavy based non-stick frying pan.
Swirl pan to coat with butter, pouring out any excess.
Cook 1/3 cup of mixture until bubbles begin forming on top.
Flip over and cook on the other side until golden.
Repeat with remaining mixture.
Serve with your favourite topping.
