Pasta Frittata

List of Ingredients
4 ounces thin spaghetti, broken in half and cooked following package directions
1 cup finely chopped onion
4 eggs
4 egg whites
6 ounces Canadian bacon, cut into small dice
3/4 cup shredded fat free cheddar cheese
1/4 cup flat leaf parsley, chopped
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic salt
1/4 teaspoon red pepper flakes
Recipe
Heat oven to 350°. Cook pasta following package directions. Drain and set aside.
Meanwhile, coat a nonstick skillet with an ovenproof handle with nonstick cooking spray. Heat over medium heat. Add onion and cook for 5 minutes.
In a large bowl, beat together the eggs, egg whites, Canadian bacon, cheese, parsley, Italian seasoning, garlic salt and red pepper flakes. Stir in the cooked pasta and onions from the skillet.
Wipe out the skillet and spray with additional cooking spray. Pour the egg and pasta mixture into the skillet and cook for 5 minutes over medium heat, stirring once halfway through cooking.
Bake at 350° for 20 minutes until top is set. Let stand 5 minutes before cutting.
