    1 2/3 cup (175 g) plain flour (All purpose)
    1/4 tsp ground cinnamon
    1/4 cup (4 Tbls) 50 g caster sugar (superfine granulated)
    1 stick (8 tbsp) 4 oz (112 g) butter
    fat for greasing
    1/4 cup (25 g) 1 oz flaked almonds
    1 tbsp granulated sugar


    Recipe



    1. Heat the oven to moderate, 180°C, gas mark 4.

    2. Sift the flour and cinnamon into a bowl and add the caster sugar.

    3. Rub in the butter, and work into a soft dough.

    4. Press the mixture into a greased Swiss roll tin.

    5. Flatten and level the surface.

    6. Sprinkle with the flaked almonds and granulated sugar.

    7. Bake for 15-20 minutes until golden brown.

    8. Cut into bars or fingers while still warm
