Coconut Pineapple Squares

Rumford Baking Powder
List of Ingredients
1 tablespoon butter
1 tablespoon sugar
1 cup sifted flour
3 teaspoons Rumford Baking Powder
1/4 teaspoon salt
3 eggs, well beaten
1 cup crushed pineapple (drained)
3/4 cup sugar
2 tablespoons butter (melted)
1 1/2 cups moist shredded coconut
Recipe
1. Cream 1 tablespoon butter and 1 tablespoon sugar.
2. Sift flour, Rumford Baking Powder and salt together and add to creamed mixture and stir until crumbly.
3. Add half the beaten eggs and mix well.
4. Spread in greased 8-inch square pan and cover with drained pineapple.
5. Mix 3/4 cup sugar, melted butter and coconut, add remaining eggs and blend well.
6. Spread over top of pineapple. Gently press topping into pineapple.
7. Bake in moderate oven (350° F.) 30-35 minutes. When cool, cut into squares.
Makes 1 1/2 dozen small squares.
