    List of Ingredients




    1/4 cup margarine or butter, melted
    1 (3-1/2 ounce) can flaked coconut ( 1-1/3 cups )
    1 cup graham cracker crumbs
    1 cup finely chopped pecans
    1 (15-ounce) can pumpkin (about 2 cups)
    1 (14-ounce) can Eagle Brand® Sweetened Condensed Milk (NOT evaporated milk)
    2 eggs
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon ground nutmeg
    1/2 teaspoon salt

    Recipe



    Preheat oven to 375°(350° for glass dish ). In medium mixing bowl, combine margarine, coconut, crumbs and nuts; mix well. Reserving one-third crumb mixture, press remainder on bottom of ungreased 13x9-inch baking pan.
    In large mixing bowl, combine remaining ingredients except reserved crumb mixture; mix well. Pour over prepared crust; top with reserved crumb mixture.
    Bake 20 to 25 minutes or until knife inserted 2 inches form edge comes out clean. Cool. Serve warm or chilled. Garnish as desired. Refrigerate leftovers.
