1-1/2 cups bran cereal
1 cup low-fat milk
1-1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 cup light molasses
1/2 cup Blue Bonnet®-stick
3/4 cup Egg Beaters® Egg Product, or 3 large eggs
PAM® Original No-Stick Cooking Spray
powdered sugar, (optional)
Recipe
Preheat oven to 350°F.
In a small bowl, combine bran and milk; let stand 5 minutes.
In a medium bowl, combine flour, baking soda, cinnamon, ginger and cloves; set aside.
In another medium bowl, combine molasses, Blue Bonnet, and eggs. Using an electric mixer at medium speed, beat molasses mixture until smooth. Blend in bran and flour mixtures.
Coat a 13-inch by 9-inch baking pan with cooking spray. Lightly flour and pour batter evenly into pan. Bake 40 to 50 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes.
Remove from pan; cool on wire rack.
Sprinkle with powdered sugar, if desired. Cut into 20 (2 1/2 inch x 2-inch) pieces
