Lentils with Garlic and Tomatoes

1 tsp olive oil
1 medium garlic clove(s), chopped
1 small onion(s), chopped
1 medium celery, stalk chopped
1 medium tomato(es), chopped
4 cup cooked lentils
1/2 cup canned chicken broth
1 Tbsp balsamic vinegar
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
2 Tbsp basil, chopped
Recipe
In a large skillet heat oil. Add garlic, onion and celery; cook until tender.
Add tomatoes, lentils and broth; bring to boil then simmer, covered, 5 minutes.
Stir in basil and vinegar. Simmer 5 minutes. Season with salt and pepper. Yields about 3/4 cup per serving.
