Austrian walnut cake

200g unsalted butter, softened
1 cup caster sugar
5 eggs
¾ cup plain flour
3 teaspoons baking powder
2 cups walnuts, finely chopped
¼ teaspoon ground cinnamon
2 teaspoons finely grated lemon rind
1 teaspoon vanillin sugar
Icing-sugar mixture to decoratRecipe
1. Grease a deep 20cm round cake pan; line base with baking paper.
2. Beat butter, caster sugar and eggs in a large bowl with an electric mixer until thick and creamy. Stir in sifted flour and baking powder, walnuts, cinnamon, rind and vanillin sugar. Spoon mixture into prepared pan; level top with a spatula.
3. Cook in a moderate oven, 180C, for about 50 minutes or until cooked when tested. (Cover cake loosely with foil if over-browning.) Stand cake in pan for five minutes; turn onto a wire rack to cool.
4. Serve walnut cake dusted with sifted icing-sugar mixture.
