    CAKE MIX

    1/4 cup brown sugar
    3/4 cup buttermilk
    1/2 cup skim milk
    1 egg
    2 Tbs monounsaturated oil
    2 cups self-raising flour
    1/3 cup wheatgerm
    1 1/2 cups pitted cherries, well drained

    CRUNCHY WALNUT TOPPING

    1/4 cup unsalted walnuts
    2 Tbs of sugar
    1 tsp ground cinnamon

    Recipe



    Preheat oven to 190 degrees C. Lightly grease a 20cm square cake tin with monounsaturated oil.
    Place topping ingredients in a bowl. Mix to combine and set aside.
    Place sugar, buttermilk, milk, egg and oil in a bowl. Whisk to combine.
    Sift together flour and wheat germ. Add to milk mixture. Mix through. Fold in cherries.
    Spoon mixture into prepared cake tin. Sprinkle crunchy walnut topping over the top.
    Place in oven and cook for 30 minutes until golden brown.
    Can be served either warm or cold.
