List of Ingredients
For Cake:
1 cup boiling water
6 oz unsweetened chocolate
1/2 cup butter
1 teaspoon vanilla extract
1 cup superfine sugar
2 eggs, separated
1/2 cup sour cream
1 teaspoon baking soda
1 1/3 cups all-purpose flour
1 teaspoon baking powder
2/3 cup ground almonds
For Garnish:
8 oz bittersweet or semisweet chocolate
2 tablespoons brandy
1 orange, thinly sliced
1/3 cup orange-flavored liqueur
Recipe
TO MAKE CAKE: Preheat oven to 350 degrees F. Grease and line a 9-in round cake pan with parchment (baking) paper. In a mixing bowl, pour the boiling water over the unsweetened chocolate and butter. Let stand until melted. Stir in vanilla and sugar, then whisk in egg yolks, one at a time, blending well after each addition. Mix in sour cream and baking soda. Sift flour and baking powder together. Add to the batter, along with ground almonds. Mix thoroughly.
Beat egg whites until stiff, but not dry. Stir one-third of egg-whites into batter. Fold in remaining egg whites. Pour into prepared pan and bake on center rack for 55 minutes. Cool in pan for 15 minutes.
TO MAKE GARNISH: For the chocolate sauce, melt bittersweet chocolate in the bowl of a double boiler and stir in brandy. For the orange slices, marinade the orange for at least 2 hours in liqueur.
TO SERVE: Spread cake with chocolate sauce and decorate with marinated orange slices and heavy cream. If desired, serve with fresh, light cream and brandy-soaked fruits or berries.
