Clabber Girl Baking Powder

3/4 cup margarine or shortening
1 1/2 cups sugar
3 eggs, separated
3 cups all-purpose flour
4 teaspoos Clabber Girl Baking Powder
1/4 teaspoon salt
1 cup milk
1 teaspoon coconut extract
1/2 cup coconut
Recipe
In a large bowl, cream margarine or shortening; add sugar, mix thoroughly. Separate eggs; beat yolks until foamy and add to creamed mixture. In a separate bowl, sift together flour, Clabber Girl Baking Powder and salt; add to creamed mixture, alternating with milk; add extract and coconut. In s separate bowl, beat egg whites until stiff peaks form; fold into batter. Pour into two greased 8-inch round cake pans.
Bake at 375 degrees F for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Makes 8 to 10 servings.
Note: This is good frosted with Fluffy Flavored Frosting*, filled with Lemon Frosting*.
