    King Arthur Flour

    List of Ingredients




    1 pound dark chocolate, or 2 2/3 cups semi-sweet chocolate chips
    1/2 cup (1 stick) unsalted butter
    4 eggs, separated
    1 1/2 teaspoons King Arthur Unbleached All-Purpose Flour
    1 1/2 teaspoons granulated sugar
    1 teaspoon hot water

    Recipe



    In a saucepan set over low heat, or in a microwave, melt together the chocolate and butter, stirring till smooth. Beat in the egg yolks, one at a time, then add the flour, sugar and hot water, stirring till smooth.

    In a separate bowl, beat the egg whites till stiff but not dry. Fold them into the chocolate mixture. Spoon the batter into a greased 8-inch round cake pan, which you've lined with parchment paper. Bake the cake in a preheated 425°F oven for 15 minutes (cake won't look done in the center). Remove the cake from the oven and cool completely on a wire rack. Refrigerate until ready to serve.

    Remove the cake from the pan, place it on a plate and serve topped with slightly sweetened whipped cream. Yield: 12 very rich servings.
