Susan Deutsch of Neutral Bay, NSW, likes to make this healthy loaf often. "I got the recipe from my father, who has been making it for a long time. We enjoy low-fat cooking and this loaf has always been successful." Susan sometimes varies the ingredients by using rolled oats if she is out of oat bran and often uses a mixture of wholemeal and white flour. "The loaf freezes well, so it's always on hand."

Makes 12 slices. Per slice 640kJ; 0.7g fat (negligible). Preparation 15 mins (plus 15 mins standing time). Cooking 50 mins.
Low-fat cakes are best eaten on the day of serving. This loaf is also delicious toasted. For a low-fat topping, serve spread with light cream cheese or a low-fat spread.

1 cup (160g) chopped dried dates
2 tablespoons golden syrup
1 cup (250ml) boiling water
½ cup (100g) firmly packed brown sugar
¾ cup (90g) oat bran
1¼ cups (185g) plain flour
1 teaspoon bicarbonate of soda
Recipe
Preheat the oven to moderate (180°C/160°C fan-forced). Grease a 14cm x 21cm loaf pan.
Combine dates and golden syrup in a large heatproof bowl; add the water and stand for 15 minutes.
Add sugar, oat bran and sifted flour and soda; stir into date mixture until well combined.
Spread mixture into the prepared pan and bake in a moderate oven for about 50 minutes or until cooked when tested. Stand 5 minutes before turning onto a wire rack to cool.
