Fruited Spice Cake

Rumford Baking Powder
List of Ingredients
1 cup dried figs, dates or prunes
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 cup water
3/4 cup shortening
1 1/2 cups light brown sugar
3 eggs
3 cups sifted flour
5 teaspoons Rumford Baking Powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
Recipe
1. Rinse dried fruit and dry on a towel.
2. Add spices and water and boil 3 minutes, stirring constantly; cool.
3. Cream shortening, add sugar gradually, creaming until light and fluffy.
4. Add eggs, one at a time, beating well after each addition.
5. Sift flour, Rumford Baking Powder and salt together and add alternately with the milk to the creamed mixture, beating only until smooth.
6. Fold in vanilla and fruit mixture.
7. Pour into 3 greased 9-inch layer pans and bake in moderate oven (375° F) 25 minutes. (Can also be baked in tube pan 70 to 80 minutes.)
8. Put layers together with Fruit Filling and cover with Spicy Frosting.
