    Almonds Are In!

    List of Ingredients




    ¼ cup butter
    ¾ cup sugar
    2 squares (1 oz. each) semi-sweet chocolate, melted and cooled
    6 eggs, separated
    1 cup whole natural almonds, ground in electric blender
    ½ cup flour
    ¼ tsp. salt
    Chocolate Cream Filling
    Chocolate Glaze
    Chopped natural almonds for garnish


    Recipe



    Cream butter with sugar. Beat in melted chocolate and egg yolks. Stir in almonds, flour and salt. Beat egg whites until stiff but not dry. Fold 1/3 into creamed mixture. Fold in remaining egg whites. Turn into greased and floured 9-inch round cake pan. Bake at 325 degrees, 50 minutes, or until edges of cake pull slightly away from pan. Cool 10 minutes in pan, then invert and cool on wire rack. Cut into 3 layers, using long, narrow-bladed knife. Place bottom layer on flat cake plate. Top with half of Chocolate Cream Filling. Stack second cake layer, remaining filling and final cake layer on top. Cover top with Chocolate Glaze. Sprinkle almonds in circle on top for garnish.
    Chocolate Glaze: Melt 3 oz. semisweet chocolate with 2 tablespoons butter in saucepan, stirring until blended.
    Chocolate Cream Filling: Melt 2 oz. semi-sweet chocolate in top of double boiler. Add 1/2 cup sugar, 3 eggs, 1 teaspoon vanilla and 1 teaspoon cornstarch. Cook scraping bottom on pan with rubber scraper, until thickened. Mix in ¼ cup butter. Cool. Mix in ½ cup ground whole natural almonds.
