Layered Apple Cinnamon Cake

Apple Filling:
3 cups - peeled, cored and thinly sliced apples
2 tablespoons - fresh lemon juice
1/2 cup - finely chopped walnuts, optional
1 teaspoon - cinnamon
Cake:
2 cups - Domino® Granulated Sugar
1 cup - vegetable oil
1 tablespoon - vanilla
3 - eggs
3 cups - all purpose flour
1 tablespoon - baking powder
1 teaspoon - cinnamon
1/2 teaspoon - salt
1/4 teaspoon - mace
1/8 teaspoon - ground cloves
1/2 cup - apple juice
Recipe
Preheat oven to 350°F. Generously grease and flour a 12-cup fluted tube pan.
In a large bowl toss the apples, lemon juice, walnuts, if desired, and cinnamon; set aside.
In a large bowl beat sugar, vegetable oil and vanilla until thick and opaque. Add eggs, one at a time, beating well after each addition.
In a large bowl stir together the flour, baking powder, cinnamon, salt, mace and cloves. Add to oil and egg mixture alternately with apple juice and mix until well blended.
Spoon one-third of the batter into the prepared pan. Cover with half the apple filling, then repeat with the remaining batter and filling.
Bake for 60-70 minutes or until golden brown and toothpick inserted in the center comes out clean. Cool cake in pan 20 minutes. Invert onto platter.
Makes 16 servings.
