Lemon Cream Cheese Frosting

List of Ingredients
1 can (300 mL) Regular or Low Fat Eagle Brand®
2 egg yolks
3 tbsp (45 mL) lemon juice
1 tsp (5 mL) vanilla extract
Yellow food colouring, optional
1 pkg (225 g) cream cheese
Recipe
1. Combine Eagle Brand, egg yolks and lemon juice. Over medium heat, cook and stir rapidly until thickened and bubbly, 4- 5 minutes. Remove from heat; stir in vanilla and food colouring, if desired. Chill 1 hour.
2. Beat cream cheese until fluffy. Gradually beat in lemon mixture until smooth.
3. Use to frost one 8-or 9 inch two layer, one 13x9 inch two-layer, or 15x10-inch cake. Refrigerate leftovers.
