One-Bowl Chocolate Cake

14 tablespoon all-purpose white flour
1/2 cup sugar
1/3 cup Dutch-process cocoa powder, unsweetened
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup light brown sugar, packed
1 each large whole eggs, lightly beaten
2 tablespoon canola oil
1 teaspoon vanilla extract
1/2 cup brewed coffee, hot, strong
1 tablespoon confectioners' sugar, for dusting
Recipe
1 Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9-inch round cake pan or coat it with nonstick cooking spray. Dust the pan with flour, tapping out the excess.
2 In a mixing bowl, whisk flour, granulated sugar, cocoa powder, baking powder, baking soda and salt. Add buttermilk, brown sugar, egg, oil and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add hot coffee and beat to blend. (The batter will be quite thin.)
3 Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a skewer inserted in the center comes out clean. Cool the cake in the pan on a wire rack for 10 minutes; remove from the pan and let cool completely. Dust the top with confectioners' sugar before slicing.
