    For the cake
    125g organic butter, softened
    125g unrefined organic cane sugar
    2 organic medium size eggs, beaten
    5 organic dessert apples
    125g organic self raising flour
    100g organic dates, chopped
    100g organic walnuts, chopped
    100g organic raisins
    200ml organic Earl Grey tea
    25g organic butter, melted
    3 x 15ml spoons organic unrefined cane sugar

    To serve
    organic double cream

    Recipe



    Preheat the oven to 180°C, 350°F, Gas Mark 4.

    Line a 20cm round tin with baking parchment.

    Beat together the butter and sugar until pale. Add the eggs gradually, beating after each addition.

    Peel and grate 3 apples, add to the mixture and fold in the flour. Spoon the mixture into the tin and bake for 15 minutes, until just set.

    Place the dates, walnuts and raisins in a bowl and pour over hot Earl Grey tea. Set aside for 10 minutes. Drain.

    Preheat the grill to high.

    Spoon the fruit and nut mixture onto the cooked sponge. Core and slice the remaining 2 apples, arrange on top of the cake, brush with butter, sprinkle over the sugar and grill until it melts. Serve warm or cold, with cream.
