    For the topping
    25g Sainsbury's Organic Butter
    50g organic plain flour
    25g organic cane sugar

    For the cake
    250g Sainsbury's Organic Self Raising Flour
    175g organic cane sugar
    zest and juice of 1 organic lemon
    2 medium organic eggs
    150ml organic whole milk
    175g Sainsbury's Organic Butter, melted
    6 x 15ml spoons Organic Lemon Curd, or Duchy Marmalade

    To serve
    organic extra thick cream


    Recipe



    Preheat the oven to 180°C, 350°F, Gas Mark 4.

    Line a 20cm round cake tin with baking parchment.

    To make the topping, rub together the butter, plain flour and sugar until the mixture resembles coarse breadcrumbs. Set aside.

    To make the cake, sieve together the self raising flour and sugar and mix in the lemon zest. Beat together the eggs, milk, butter and lemon juice, and quickly beat into the flour mixture. Fold in the lemon curd or marmalade.

    Pour the cake mixture into the prepared cake tin and sprinkle with the crumble topping.

    Bake in a preheated oven for about 1 hour until the centre is springy. Cool in the tin for 30 minutes, then turn out. Delicious served with organic thick cream.
