List of Ingredients
2/3 Cup Slivered Almonds
2/3 Cup Chopped Macadamia Nuts
2/3 Cup Chopped Walnuts
1 ½ Cups Mixed Dried Fruit
2/3 Cup Plain Flour
2 Tbsp Cocoa Powder
1 Tsp Ground Cinnamon
60g Dark Chocolate, chopped
60g Western Star Butter
1/3 Cup Castor Sugar
¼ Cup Honey
Icing Sugar, for dusting
Recipe
Preheat oven to 180C. Lightly grease a shallow 20cm round cake tin and line the base with baking paper.
In a bowl combine nuts and dried fruit in a large bowl, then sift in the flour, cocoa, and cinnamon and stir well until combined. Make a well in the centre.
Stir the chocolate, butter, sugar and honey in a small saucepan over low heat until melted and well combined. Add this mixture to the flour mixture and using a wooden spoon, stir all the ingredients until they’re well combined but do not overbeat.
Spoon the mixture into the prepared tin and smooth the surface. Bake for 50 minutes or until cake is firm to the touch. Allow to cool in the tin before turning out to cool.
To serve, dust with icing sugar and slice into thin slices. Perfect with a coffee or liqueur
