2 cups poppy seeds
Milk
1/ 2 cup sugar
3 tablespoons honey
1/ 2 cup golden raisins
5 tablespoons chopped almonds
Grated zest of 1/ 3 lemon
2 tablespoons butter, melted
2 large egg whites
1 large egg yolk, beaten with 1 tablespoon milk
Recipe
In a medium-size saucepan over medium heat, scald the poppy seeds in enough milk to barely cover for 2 to 3 minutes. Drain off all but a few tablespoons of the milk.
In a food processor, grind the poppy seeds with the remaining milk. Combine in a bowl with the sugar, honey, raisins, almonds, lemon zest, melted butter, and egg whites and mix well. Sprinkle big cutting board with flour and roll out the dough to a 12-inch square about 1/ 4 inch thick. Spread the filling on the dough, leaving a 1/ 2 inch border all around. Roll up the cake. Let stand covered with a cotton cloth for 20-25 minutes.
Preheat oven to 350 F. Lightly butter a bread pan. Place the roll on the pan and brush with the egg yolk beaten with milk. Bake about 45 min until browned. Cool for 25 minutes, cut and serve.
