Pineapple Cake

List of Ingredients
1 ½ Cups Castor Sugar
175g Desiccated Coconut, lightly toasted
1 Cup Coconut Milk
1 ½ Cups Diced Pineapple (fresh if possible)
4 Eggs
2 Cups Plain Flour
2 Tsp Baking Powder
1 Tbsp Western Star Butter
1 Cup Icing Sugar
2 Tbsp Lime Juice
Recipe
Preheat the oven to 180C. Lightly grease and line a springform cake tin.
In a large bowl, mix together the sugar, coconut, milk, pineapple and eggs until combined. Sift in the flour and baking powder, and then fold these in gently.
Pour the batter into the cake tin, and place in the oven for approximately 1 hour, and test the cake with a skewer.
In a separate bowl, add the butter, icing sugar and lime juice until it is smooth and runny enough to drizzle over the cake.
Once the cake has cooled slightly, pour the icing over and allow to set and cool completely.
