Pryaniuk (Spice cake)

1 c. honey
1/2 c. sugar
1 c. chopped almonds
1/4 c. finely chopped citron
1/4 c. grated orange peel
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. ginger
1 tsp. baking soda
4 c. flour
Recipe
Bring honey and sugar to boil, add citron and orange peel. Sift dry ingredients, add nuts, stir in honey mixture and knead to thoroughly mix, so dough will be very stiff. Roll out a small portion on floured board to 1/8 inch thickness. Keep unused portion warm to keep dough soft. Cut into desired shapes with cookie cutter, place on lightly greased sheet and bake at 375 to 400 degrees until very light brown and firm. When cold, stack on edge in a pan, leave exposed in a cool area, not kitchen, for 3 or 4 days until softened. Frost with powdered sugar and water flavored with almond extract.
NOTE: You may make two larger pryaniks. Glue them together with cherry or apple jam and frost the upper one. Then it's so called kovrizhka, Russian spicy honey cake.
