125g softened butter
½ cup caster sugar
1 teaspoon vanilla essence
grated zest of 1 lemon
2 eggs
¾ cup self raising flour
1 teaspoon baking powder
½ cup plain flour
1/3 cup milk
½ cup currantsRecipe
Preheat oven to 200°C.
Line 2 x 15 hole patty tins with patty papers.
Beat butter and sugar until light and creamy. Add vanilla and lemon zest.
Beat eggs into mixture one at a time.
Sift self raising flour and plain flour. Fold through sifted flours and baking powder into the mixture and mix in the milk. (If the mixture appears too dry add 1-2 extra Tablespoons of milk to keep it moist.)
Add currants and fold through into mixture.
Place tablespoons of the mixture into patty papers and bake for 15-20 minutes or until browned.
Serve sprinkled with icing sugar.
