Simple Apple Cake

List of Ingredients
2 Cups of peeled and chopped Granny Smith Apples
2 Tbsp Brandy or Rum
140g Western Star Butter
160g Self Raising Flour
1 Tsp Baking Powder
3 Eggs
120g Castor Sugar
Recipe
Preheat the oven to 200C. Place the chopped apple into a bowl, and soak with the spirits for 30 minutes.
Lightly grease a ring tin or normal cake tin with a little bit of the butter. Place the remainder of the butter into a small saucepan and melt, and then allow to cool.
Sift in the flour and baking powder. In a separate bowl, whisk the eggs and sugar together until pale and fluffy, and then fold in the flour mixture. Now add the melted butter and gently fold through.
Now fold in the apple and any juices, and spoon the mixture into a prepared tin and place in the oven for 40 minutes until the cake is golden brown and a skewer comes out clean.
Serve warm with cream, ice cream or custard. Can also be served cold
