75g Plain Flour
2 Tbsp Castor Sugar
65g Western Star Butter, cold and roughly chopped
2 Eggs
1 Cup Castor Sugar
1/3 Cup Lemon Juice
3 Tbsp Plain Flour
Pure Icing Sugar
Recipe
Preheat the oven to 160C. Lightly grease an 18cm spring form tin.
To make the base, add the flour and sugar to a food processor and blend together for 1 minute. Slowly add the butter until it forms a ball or dough.
Press the dough into the tin, pushing to the edges with your fingers, then bake for 20 minutes in the oven.
In a mixing bowl, whisk together the eggs and the sugar until well combined. Stir in the lemon juice and sift in the flour and whisk gently. Set aside.
Remove the base from the oven and reduce the oven to 150C. Pour the filling into the base tin and bake for a further 35 minutes or until golden. Cool completely, dust with icing sugar and then slice into pieces.
