    2 c flour
    2 tsp baking powder
    2 tsp baking soda
    2 tsp cinnamon
    1 tsp salt
    ½ tsp nutmeg
    ¼ tsp allspice
    4 eggs
    1-1/4 c sugar
    ¼ c honey
    1 ¼ c oil
    3 c shredded carrots
    1 c crushed pineapple with juice
    ½ c shredded coconut
    ½ c chopped walnuts

    CREAM CHEESE ICING:
    2 pkgs cream cheese (250-g)
    1 c butter
    3 tbsp honey
    2 tsp vanilla
    4 - 4 ½ c icing sugar, sifted

    Recipe



    Preheat oven to 400F
    Grease and flour 3 cake pans

    In large bowl, combine flour, salt, nutmeg, baking powder, baking soda. cinnamon, and allspice.

    In separate bowl, beat eggs, sugar, honey for 3 minutes. Add oil and beat for one minute
    Stir in carrots, pineapple, raisins, coconuts and walnuts.

    Gradually add dry ingredients in 3 parts, mixing well after each addition.

    Pour batter into pans. Bake in center of 400F preheated oven for 5 mintes. Trun heat dwon to 350F, and bake 25 minutes. Cool 20 minutes. Turn out onto wire racks and cool completely.

    Prepare icing, using electric mixer. Beat first the honey, vanilla, butter and cream cheese. Add icing sugar a bit at a time. Spread on each layer, then stack.
